SABI Sky Omakase

The art of imperfection

Rooted in the philosophy of wabi-sabi, SABI Sky Omakase embraces the beauty of imperfection, the passage of time, and the honesty of things in their purest form. On the 25th floor, overlooking the city, the dining journey unfolds with intention, curated ingredients, precise techniques, and moments shaped with quiet refinement.

At its heart is kuro-shari, a rare black-vinegar rice introduced to Vietnam for the first time, carrying depth, aroma, and a character that defines SABI’s expression of omakase.

Pairing & Beyond
SABI's Beverage Menu

Here at SABI, every beverage is more than a pour-it is a moment of wa (和).

wa (和) is harmony, balance, and the quiet beauty of things as they are. It is found in contrast as much as in alignment: warmth meeting coolness, richness against restraint, smoke softening clarity.
